Zero-Proof Ramos Gin Fizz

The New Orleans fizz with cream and orange flower water. Long shake, tall meringue-like head.

Ingredients

  • 2 ozLyre's Dry London Spirit
  • 0.5 ozFresh lemon juice
  • 0.5 ozFresh lime juice
  • 1 ozSimple syrup (1:1)
  • 1 ozHeavy cream
  • 1Egg white
  • 3 dropsOrange flower water
  • 2 ozVery cold soda water

Method

  1. Dry-shake everything except the soda for 20 seconds.
  2. Add ice and shake as hard and long as you can manage, at least 30 seconds.
  3. Strain into a chilled Collins glass with no ice and let it settle for a minute.
  4. Pour the soda slowly into the center so the head rises above the rim.
