Mojito Pitcher

Eight mojitos. Mint syrup does the muddling for you; add the soda at the last minute.

Ingredients

  • 1 cupSugar
  • 1 cupHot water
  • 2 handfulsFresh mint (one for the syrup, one for the jug)
  • 8 ozFresh lime juice
  • 16 ozLyre's White Cane Spirit
  • 16 ozChilled soda water

Method

  1. Stir the sugar into the hot water, add a handful of mint and steep for 20 minutes. Strain and chill.
  2. In a pitcher, combine 6 oz of the mint syrup, the lime juice and the rum alternative. Add the second handful of mint and press it lightly with a spoon.
  3. Just before serving, add ice and the soda water and stir once.
  4. Pour into ice-filled glasses and garnish each with mint and lime.
